Mokoko Coffee Shop & Bakery Case Study

Date Posted: 11 August 2016

Bristol’s harbour side is home to the New Wapping Wharf development and situated along Gaol Ferry Steps is Mokoko, a New Coffee Shop & Bakery.

Mokoko recently opened on 1 June and is the creation of Jake Harris who already has two coffee houses in Bath and has been trading for 5 years.

Their Bristol operation is substantially larger, taking up two units split roughly into thirds: a narrow seating area with large overhanging lamps, an open kitchen where customers can see all the mouth-watering products being created from scratch and finally a service area to purchase all the delicious creations.

The shop has a very modern feel with colourful tiles and wooden furniture.  In addition to the indoor seating, there is also outside seating for visitors looking to soak up the summer sunshine.

Jake said, ‘We chose Bristol as it is in close proximity to where we already operate and the Wapping Wharf development supports small businesses like ourselves.’

Mokoko’s staff includes Dale Ingram, head pastry chef and baker with over 40 years’ experience and Jordan Keen, a highly skilled barista.

Understandably, only the best is good enough to produce these delicious creations and Jake naturally selected MONO Equipment to supply his equipment.

‘Mono Equipment was my ultimate choice of suppliers as they are based in the United Kingdom and all their products are British made as well as them having a reputation for supplying high quality, reliable equipment.

I was extremely pleased with the quality and level of service I received from the outset from MONO Equipment and Sales Executive, Christian Trubey, was always on hand to discuss any questions I had.  Also with their 2-year extended warranty offering I have complete peace of mind that the equipment I have brought will last a lifetime.  I would definitely recommend MONO Equipment.'

The Equipment

MONO’s equipment at Mokoko includes our highly-versatile Harmony Modular Deck Oven, the unique spiral and planetary mixers and a Williams Crystal Prover and Retarder Prover.

Bear’s floor-standing Planetary Mixer has a surprisingly small footprint enabling them to be used in premises where space is at a premium.  The mixer features the highly reliable Bear variable speed system and the user-friendly control panel can store up to 4 programs for quick and easy product recall.

Esmach’s Spiral Mixer is suitable for all kinds of dough and is designed to make the mixing process as simple and efficient as possible.

Renowned for its reliability, consistency and mellow bake, the Harmony Modular Deck Oven is the preferred choice of many supermarkets chains, independent artisan bakers and the very best 5-star restaurants and hotels - perfect for baking an exquisite range of artisan breads, viennoiserie and patisserie to perfection.
